Stir-fried Whitebait with Leek

Pick off the yellow leaves of the leeks, wash them, and cut them into 3 cm long pieces for later use.

Choose fresh whitebait, remove weeds, wash and drain, and put in a bowl.

Wash the pot and put it on a high fire, add 500 g of water to a boil, add the whitebait to blanch, quickly remove it, and drain the water for later use.

Wash the pot and put it on high heat, add vegetable oil and cook until it is 60% hot.

Pour the whitebait and stir fry, add cooking wine, refined salt, green onion and ginger juice, and stir-fry until the whitebait is broken and discolored, then put it in a bowl.

Wash the wok and put it on high heat, then scoop in vegetable oil, and when it is 80% hot, add salt.

Pour in the leeks and stir fry until slightly soft.

Then add the fried whitebait, season with MSG, drizzle with sesame oil, stir-fry evenly, and serve.
Tips:
1. Leeks are best early spring leeks, and if you switch to leeks, the taste is also good.
2. Choose fresh or chilled whitebait; the whitebait is served first after being fried.
3. When stir-frying the leeks, use a high heat to quickly stir fry, and then add the whitebait, and stir fry the whitebait together, which will affect the quality of the finished product.
