There is a famous dish in Huaiyang cuisine, which is "Boiled Dried Silk". The main ingredient of the big boiled dried shreds is dried tofu, which is delicately produced and has a unique flavor.

"Boiled dried silk" is also known as "chicken juice dried silk" or "chicken fire dried silk". The knife skills and heat requirements of this dish are particularly strict. First, the special dried tofu, about 1 cm thick, is cut into 24 uniform slices, and then cut into thin strands like matchsticks. Blanch it twice with boiling water to remove the beany smell. Then mix with chicken shreds, chicken gizzard liver, kidneys, bamboo shoots and other auxiliary materials, add chicken farm and seasonings to make it. 2. The soup I made this time is the soup I drank. I like the clear soup. It is not white enough. If the white chicken soup is white, use high heat.
