Prepare prawns, ham (preferably Jinhua ham, I don’t have Jinhua ham to replace it with others), shiitake mushrooms, green onion and ginger.

Slice the dried bean curd into thin slices and then cut into filaments for later use.

Cut the ham, shiitake mushrooms, and chicken breast into thin strips, and cut the green onion and ginger into thin strips.

Remove the head, shell and glands of the shrimp, open the spine and take out the shrimp intestines, add cooking wine, light soy sauce, a little salt, and a little egg for preparation.

The cut dried shreds are blanched in a pot of boiling water and set aside.

After blanching the small rapeseed, let it cool in water and set aside.

Tips:
1. The dried shreds are best to use dried tofu slices that taste good. It is troublesome to make, so if it saves trouble, you can use tofu skin instead.
2. The soup I made this time is the soup I drank. I like the clear soup. It is not white enough. If the white chicken soup is white, use high heat.
3. The shredded chicken can be torn by hand if it is difficult to cut.
4. The best ham is Jinhua ham.
