There are 4 dishes in the picture, almost just enough to pickle one bottle (about 20cm high and 14cm wide), and then move the small heads down one by one

After removing the small head, clean the middle part (a lot of it will be hollow this season, I will eat it separately)

Cut the middle part into small pieces like this

Then clean the small head that was removed: the left side is shaved, the right side is not shaved (my grandma doesn't shave it, it feels wasteful, but I don’t think it tastes good, it’s up to me)

If the small head is bigger, split it in half. The one on the left is solid and the one on the right is hollow (this is basically the case this season, and does not affect the pickling)

After washing and draining, sprinkle 7 or 8 spoons of salt in a spoon of my size, then twist the bowl a few times to make it evenly mixed

Then press a heavy object on it. After pressing for a day and a night, the spiciness of the vegetable is pressed out, and then you can add it to the cold and boil it, and add water to cover the vegetable (the water from the vegetable does not need to be poured out) , Just add the cold and boil it directly)

One or two days after adding water, you can put it in the bottle: the left side is the one that has been marinated for about 10 days and is fully cooked; the right side is the one that has just been put in, and it must be compacted.

One thing is very important: the water must cover the dishes, because sometimes they will float, causing a few dishes to appear a little yellow and black, as shown in the left picture; the right picture is more yellow and bright, of course they can all be eaten, but the appearance is good. Almost

Then slice it, put some MSG, sesame oil, and vinegar (more if you like sour, less if you don’t like it)
Tips:
1. You can press any heavy objects, find the right one for yourself, it is best to receive the force evenly, so that all the dishes can be strengthened. In the picture, the circle around the washbasin is still a bit unsufficient, so it takes 4 or 5 hours for me to exchange positions between the middle and the surrounding ones.
2. After being packed in a bottle and compacted, it is not finished like this. Because of the buoyancy of the water, the dishes above will still float frequently, so we have to press several times every day to compact it.
