Super Simple Chocolate Soft Cookies (reduced Sugar Version) Chocolate Chip Cookies

Oven preheating hot air function 180 °C/380 °F
Up and down fire 200 °C/400 °F

Take out 100g of unsalted butter from the refrigerator, put it in a microwave oven, and heat it in the microwave for 30 seconds

The finished butter came out in a semi-melted state

Pour 80g brown sugar and 15g white sugar into a large bowl
(The brown sugar in the picture is agglomerated...(ಥ﹏ಥ), so I had to pour them all into the blender and break them up... This is convenient for whipping afterwards)

Add the semi-melted butter and beat with a whisk until the sugar is dissolved and the mixture of butter and sugar is emulsified.
The color becomes very light brown, a bit like light coffee cream

Add 1 tablespoon of honey, beat an egg into it and stir gently

Put in 200g flour
(I use ordinary all-purpose flour)

Add 1/2 teaspoon baking soda, 1/3 teaspoon salt, and 1 teaspoon cornstarch (optional)

Use a spatula to cut and mix until there is no dry powder. Depending on the condition of the dough, you can add 1-2 spoons of flour appropriately to make it a soft dough.
Although the dough is soft, it can be manipulated if it can form a dough

Pour 70-80g crushed walnuts and 40g chocolate beans/chocolate chips
(You can leave about 5g of chocolate beans/chocolate chips, do not pour it in first, and then use it to decorate the surface of the cookie, you don’t need it if you find it troublesome~)

Use your hand or a spatula to chop the walnuts and chopped chocolate evenly

You can use gloves with your hands or with the help of a spoon for digging ice cream to separate 15 or so dough balls and place them on a baking sheet lined with baking paper.
A dough ball is about 1 tablespoon (normal spoon)
Leave a little space between the dough balls

Use your hands to gently flatten each dough ball a little bit.
It is recommended to keep some thickness, so that the baked cookies are crispy on the outside and soft on the inside~
(If you have reserved some chocolate beans/chocolate pieces, you can press them on the surface of the dough for decoration)

Put it in the oven and bake for 8-9 minutes until the edges are slightly browned.

(Many cookie recipes generally bake at 350°F/175°C for about 10-12 minutes, and this recipe uses a higher temperature method to help cookies achieve crispy outside and soft inside)
But you still have to adjust the baking time according to your own oven skills~
Anyway, it is recommended to stare at the cookies in the last few minutes and stop baking them. . .
