Sweet and Sour Black Fish

Cut the surface of the black fish with an oblique cross knife, remove the internal organs, smear with salt, pepper, and cooking wine, stuff the belly with green onion and ginger and marinate for about half an hour.

Pat the marinated fish with appropriate amount of dry starch, put it in an oil pan, medium oil temperature, and fry slowly until the fish is cooked through.

Shred the green onion, ginger and carrot, and cut the green garlic fish into sections.

Put an appropriate amount of oil in the pot, add the ginger and sauté until fragrant.

Add tomato sauce and fry until fragrant, add sugar, vinegar, and water, adjust according to your own taste, and cook until the soup becomes soupy.

Put the green onions, carrots, and green garlic on the fried fish and pour the sweet and sour sauce on top.
