Sweet and Sour Lotus Root Meatballs

The shiitake mushrooms need to be soaked for 20 minutes first

Peel the lotus root, wash and wipe it into a puree, and squeeze the water in the lotus root thoroughly with your hands.

After soaking the shiitake mushrooms, wash and remove the stalks and chop them, mix well with lotus root, flour, and appropriate amount of salt.

Pinch the mixture firmly and knead it into small balls.

Put the kneaded balls in boiling water and cook for 5 minutes to remove.

Put some oil in the wok, stir-fry the meatballs, add light soy sauce, vinegar, and sugar and stir-fry on a plate
Tips:
Squeeze the lotus root moisture as much as possible to make it difficult to disperse
