Sweet and sour pork loin is one of the classic Han dishes. It is found in Zhejiang cuisine, Shandong cuisine, Sichuan cuisine, Cantonese cuisine and Huai cuisine. The sweet and sour pork loin of Shandong cuisine is the most famous. The sweet and sour pork tenderloin is mainly made of pork tenderloin, with flour, starch, vinegar and other ingredients. It is sweet and sour and makes people appetite.

Sweet and Sour Pork

1. Cut the tenderloin into 1 cm thick strips, soak in starch and water

2. Add salt, pepper, and cooking wine to the meat strips and mix well and marinate for 10 minutes. Add tomato sauce, sugar, rice vinegar, soy sauce and a little water to the bowl and mix well to make a bowl of juice

3. Pour out the excess water in the starch, put it in the marinated meat strips, add egg whites, and stir evenly with flour

4. Put a little bit more oil in the pot, heat it to 80% oil temperature, add the battered meat strips, fry until the surface is white and take out. (Note that the meat strips should not be put into the oil pan together, but should be put in one by one, not too much at a time)

5. Increase the oil temperature and fry the meat strips again until they are golden in appearance, remove the oil and set aside

6. Leave a little oil in the pot, add the juice to the bowl and heat until thick and blistered

7. Add the meat strips and stir fry, wrap the juice on the meat strips

8. After adding sesame seeds, stir-fry evenly before serving

Tips:

When boiling the tomato sauce, cook it a little longer, and wait until the color of the sauce becomes redder than the color of the tomato sauce, otherwise the color of the finished product is not beautiful enough.
