Sweet and Sour Pork Tenderloin in Tomato Sauce

Remove the fascia from the tenderloin.

Cut the tenderloin into thick strips.

Put it in a bowl, add salt, white pepper in the cooking wine and marinate for 10 minutes.

Add starch and mix well until all tenderloins are thinly covered with starch.

Take a bowl and add ketchup, water, starch, vinegar and sugar to make a sauce.

Chop the green onion and ginger.

Pour oil into the pot until it is 60% hot. Put the meat strips one by one and fry for about one minute to remove the oil. After frying, re-fry the meat strips for a while until golden brown, and remove the oil.

Leave a little oil in the pot and sauté the chopped green onion and ginger

Pour in the sauce and heat to a boil over low heat.

The broth is concentrated.

Pour in the fried tenderloin strips.

Stir-fry evenly.
Tips:
The noodles should be thin, not very thick. The fried pork sticks need to be re-fried.
