Sweet and Sour Potatoes

Wash the potatoes, peel them, and cut into large pieces for later use.

Prepare the seasoning juice: Mix the sugar, cooking wine, soy sauce, and CUCU vinegar evenly, and set aside.

Heat the frying pan and pour oil. The amount of oil is twice as much as usual. Spread the potato pieces in the pan, fry them on medium heat until golden brown and turn them over until the potato pieces are fried on all sides. Take out the potatoes, leaving only the bottom oil in the pot.

Pour in the prepared sauce, add a small bowl of water (about 150g), boil, pour in the potatoes, cover and simmer over medium-low heat for 4-5 minutes.

Finally, open the lid and turn to high heat to collect the juice, stir well, turn off the heat, and sprinkle with sesame and coriander, and it can be out of the pan.
Tips:
1. In the process of frying potatoes, fry the potatoes until they are half cooked for a better taste.
2. Because there is sugar in the sauce, you need to open the lid and flip it a bit during the simmering period to prevent the sauce from burning and sticking to the bottom.
