Sweet and Sour Short Ribs

The big one is a spoon and the small one is a tea spoon.

Choose high-quality pork ribs, chop them into inch-long pieces, rinse them well and set aside. Add 2 tablespoons of rice wine, 1 teaspoon of table salt, and marinate for half an hour.

After marinating, add an egg white, 2 teaspoons of starch, add 1 tablespoon of cooking oil, mix well and start making. This recipe is made using an air fryer, which is healthier and more fuel-efficient. If an air fryer is not available, traditional frying methods can also be used.

The air fryer temperature is set to 190 degrees and preheated for three minutes. If it is the ordinary method of frying the ribs, you can start frying when the oil is 50% hot.

Spread the ribs flat in the frying pan of the fryer. Don't be too greedy. Spread one layer flat. If you can't fit them, you can fry them twice.

In an air fryer, fry at 190 degrees for 12 minutes. Take out the basket halfway and turn the ribs over. Ordinary frying method, fry the ribs until golden brown and take them out. After all of them are fried, re-fry them with high-temperature oil for half a minute.

Take out the fried pork ribs, make all the ribs according to this method, and then color and season them.

Add half a bowl of water to the pot, add rock sugar, simmer over medium heat, and melt the rock sugar.

The sugar is all melted, simmer for a while on a medium-low heat, and the water is evaporated to dryness. When the syrup remaining in the pot turns yellowish brown, the sugar color will be cooked.

At this time, add the ribs and stir fry quickly to make them evenly colored with sugar.

Add 1.5 tablespoons of light soy sauce and 3 tablespoons of balsamic vinegar and stir-fry evenly.
