Sweet Potato Meringue Buns

Wash the sweet potatoes first and then steam them

Because my sweet potatoes are dry chestnut potatoes, I add 1/3 of the milk and use a wall breaker to mash them (depending on the sweet potato variety).

Put all the dough materials into the bucket of the bread machine in order, set the dough for 10 minutes, let it rest for 5 minutes, and then mix the dough for 20 minutes.

After kneading the dough, the dough is in a complete state, and a beautiful glove film can be pulled out.

After rounding the dough, put it into the bread machine and perform a round, which takes about 30 minutes.

When the dough is twice as large, insert your fingers into the dough and pull it up, and the hole does not retract significantly.

Take out the dough and vent it. Divide it into 8 equal parts. I divide it into 70 grams. It is directly rounded and placed in a suitable mold. Put it in the oven for two shots.

At the second time, we will make the ingredients for the puff pastry:
1) First soften the butter; 2) Add powdered sugar and beat with a whisk until white and leavened; 3) Add the egg yolk and continue beating until it is completely absorbed; 4) Add the pre-made sweet potato mash;

5) Continue to beat with a whisk until the mashed sweet potatoes are fully integrated; 6) Add low-gluten flour; 7) Beat evenly with a whisk; 8) Put it into a small piping bag and cut a small opening on the mouth for later use.

After 30 minutes, take out the second-sent bread.

Squeeze the prepared pastry material, and preheat the upper and lower tubes of the oven at 175 degrees.

Tips:
The consistency of the mashed sweet potatoes is different, please adjust the amount of water yourself.
