Sweet Strawberry Tart

First make strawberry jam, reserve the amount of strawberries needed for the strawberry tower, wash the rest, prepare 3g starch, 20g water, and 45g sugar.

Put the strawberries into the food processor, add sugar and water starch, and stir the strawberries into a paste.

Strawberry paste is simmered in a small pot for about 10 minutes, part of the water is removed, making it thick, and making strawberry jam.

After the strawberry jam is allowed to cool, it is canned and refrigerated for later use.

Ready to make tapi. Wash the strawberries and blueberries, weigh out the flour, butter, sugar and cold water and set aside.

Sift the flour and sugar into a basin, and then add the softened butter.

Knead the flour with your hands finely to form the state of coarse corn flour.

Tips: 1. If you can't buy strawberries, you can use cherries instead. The cherry filling can be marinated with 20g of sugar, and the marinated juice is also added with an appropriate amount of starch to thicken it and then boiled to make a sauce for use.
2. Strawberry jam can be made, or you can buy finished strawberry jam for use.
3. The sauce and strawberries are filled when they are ready to be eaten. Filling the sauce too early will soften the tapioca.
