The traditional wife cake is a Chinese pastry, and it is not much different from other Chinese pastry practices in the blog. However, with the continuous development of the wife cake and the continuous renovation of the pattern, a variety of "wife cakes" "The sloppy flowers are gradually becoming charming. In particular, some bakery shops replace the Chinese-style pastry with the mille-layer pastry to make the wife's cake, which can be said to be a combination of Chinese and Western.
Today’s blog post is still the traditional wife’s cake, which is the same as the one I posted on Weibo during the Spring Festival. My mother likes this recipe very much—not surprisingly, the more traditional things, the more she always likes it. 3. Spread the fried stuffing flat on a plate, put it in the refrigerator for 1 hour, and refrigerate it until the stuffing is not sticky; divide the refrigerated stuffing evenly into 16 portions for later use

4. Then make the water and oily skin, mix all the flour, sugar, egg liquid, lard, and water, and knead it into a smooth and soft dough (according to the water absorption of the flour, the amount of water needs to be adjusted as appropriate, and it must be kneaded into a soft dough. Not too dry); Divide the dough into 16 parts, knead them into balls, and let them rest for half an hour (to prevent the surface of the dough from drying out, cover it with plastic wrap or a damp cloth)

5. Then make shortbread. Mix the flour and lard and knead until it forms a dough. Divide the kneaded pastry dough into 16 equal parts; take a piece of water and oily skin dough that has been set aside and flatten it into a round shape

6. Place the pastry dough in the center of the water and oil skin dough; wrap it up, and place it with the opening facing down

7. Roll out the wrapped dough with a rolling pin into an oval shape; after rolling it out, roll it up from top to bottom

8. Rotate the rolled dough 90 degrees and roll it out again into an oval shape (this time the oval shape will be longer than the first time); roll it up again from top to bottom

9. As shown in the picture, roll all the 16 pieces of dough, and let it rest for 15 minutes (remember to cover with a damp cloth or plastic wrap); take a piece of dough that has been allowed to stand and roll it out into a circle (as far as possible, roll it into the middle and thick around thin)

10. Put a piece of glutinous rice filling in the center of the dough and wrap it; after wrapping, close it down, roll it into a round cake, and place it on a baking tray

11. Brush the surface of the dough with whole egg liquid; sprinkle with some white sesame seeds. Then use a knife to make three cuts on the surface of the dough (need to cut through the dough). After standing for another 15 minutes, put it in a preheated oven at 200 degrees and bake for about 15 minutes until the surface is golden.

Tips:

1. The filling of this wife's pie is traditional glutinous rice filling. Nowadays, there are many kinds of fillings for wife pie. Bean paste and jujube paste can be used as fillings for wife pie, and you can choose according to your own preferences;
2. Winter melon velvet is added to the filling of traditional wife pie, and it is generally replaced with sugared winter melon for convenience. If you have sugar winter melon strips, cut 40 grams of sugar winter melon strips into small cubes or paste them into the filling, the taste will be richer and closer to the flavor of traditional wife pie;
3. Chinese pastries like to be made with lard, which has good crisping effect and strong aroma. If lard is not available, butter can be used instead. If you don't even want to use butter, use vegetable oil! The same amount can be substituted, but the effect of shortening is the best lard, the second is butter, and the second is vegetable oil;
4. The last process (cutting the noodles) is not only for aesthetics, but also for the internal heat to be released when the wife pie is baked, otherwise, the filling will easily burst out when baking;
5. All-purpose flour is ordinary flour for household use. It can also be replaced by half of high-gluten flour and half of low-gluten flour;
