Taiwanese Braised Pork Rice

Choose pork belly with skin, it tastes chewy!

Rinse the pork belly, put it in a pot and boil it for about 10 minutes!

Take out the cooked pork belly and let it dry

Cut the dried pork belly into 3 cm wide strips

Put some soybean oil in the wok (a little more oil than the cooking oil is fine) and don't put too much. After the oil is boiled, pour the cut pork belly into the wok and fry it. The main thing is to fry the oil of pork belly! After sautéing, pour the pork belly and the oil into two bowls, and save the oil for later cooking.

After preparing all the ingredients, prepare a casserole.

Pour the fried pork belly into a casserole, then put all the spices in the pot one by one, then turn to a low heat and simmer for more than 1 hour. (Don't put the eggs and greens first) Cook the eggs and set aside!

After simmering the pork belly for about 1 hour, put the boiled eggs in the pot and simmer them together.

After the eggs are flavored, the soup in the pot will become thicker and the heat can be turned off.

After turning off the heat, the braised pork can be served on a plate. Soup your favorite vegetables with a little salt. The color of the dishes will look better!
Tips:
Don't put too much soy sauce, the color will become darker! When frying pork belly, don't take too long. The eggs should be boiled and matured first, and the vegetables can be replaced with your favorite ones!
