Taiwanese Style Braised Pork

Cut the pork belly into square strips about 1 cm in length.

Pick up the mushrooms and dried shrimps that were soaked overnight, soak them in water and leave them for later use.

Shred dried shrimps and shredded mushrooms.

Prepare about 1 tablespoon of minced ginger, chop garlic and shallots into halves of star anise, and prepare 2 pieces of tangerine peel.

Bring to a boil over medium-high heat, pour in pork belly.

Stir out the oil, separate the meat and lard, and leave the bottom oil in the pot.

Pour in the chopped green onions and chopped ginger, stir for a while, then add the garlic, and sauté.

Pour in dried shrimps and mushrooms and flip a few times.

Add tangerine peel and star anise, and sauté with the ingredients in the pot.

Add the braised pork belly.

Put the water that has soaked the mushrooms and dried shrimps. If it is not enough, add water or broth. In short, the surface of the water is level with the ingredients.

Add 2 tablespoons of soy sauce paste, 1 tablespoon of oyster sauce, 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce, 10 grams of rock sugar, 1 tablespoon of brown sugar, 2 tablespoons of rice wine and scallion pastry.

Flip for a while, close the lid, and simmer for about 30 minutes.

Open the lid, try to pick out the dried tangerine peel and star anise and discard. If the taste is not salty enough, add some light soy sauce, and if the taste is not enough, add some rock sugar.

Put the shelled boiled eggs in, then simmer on low heat for about 20 minutes, turn off the heat, close the lid, and let stand for about 30 minutes to let the eggs soak and taste.

Tips:
1. The pork belly used for braised pork is better with the skin. You can't buy the skinless pork belly. Skinless pork belly is hard on the top of the scalp.
2. Putting a little tangerine peel can increase the fragrance and remove the smell of meat, and the star anise should not be enlarged too much, otherwise the smell of other spices will be covered;
3. Delicious braised pork, rock sugar is also an important factor, rock sugar can make the meat and soup bright and harmonious;
4. With the addition of oil onion crisp, the soup will thicken naturally, so there is no need to splash water and starch;
