Prepare the materials. (You can also directly use fried peanuts instead)

Add a little oil to the pot and heat it up, put the peanuts in and stir fry slowly over medium and low heat.

When the peanuts make a "cracking" sound, turn off the heat. (After turning off the heat, use the remaining heat of the pot to fry the peanuts, otherwise the peanuts that are overfried will become bitter.)

Just during the cooking time, I used rice-washing water to clean the cucumbers. (The reason for washing cucumbers with rice water is that the rice water is weakly alkaline and can wash away the pesticides on the surface of vegetables.)

Place the washed cucumber on the chopping board, pat it open with a knife, and cut into small pieces.

Add a little salt to the patted cucumber and pickle it for about 5 minutes. After the cucumber has been pickled, drain the water.

Mince garlic and crush peanuts with a knife. (Eating peanuts must be eaten with red skin. The thin red coat on the outside of peanuts has many benefits to the human body.)

Add minced garlic, peanuts, light soy sauce, sesame oil, sugar, chicken essence, and balsamic vinegar to the pickled cucumbers. Stir thoroughly and taste.

If you like spicy food, you can add it while stirring.
