I have been thinking about this taro chicken rice. It is the most flavorful simmering in an earthen pot. It feels refreshing to eat in a pot when it's cold.

Taro Chicken Rice

1. Two spare chicken legs

2. Wash the taro and set aside

3. After washing the rice, put it in an earthen pot and soak in water for 10 minutes.

4. Chicken Drumsticks

5. Taro diced

6. Put edible oil in the wok, stir fry with pepper and fennel, then put the bean paste and stir fry the red oil, put the chili section and stir

7. Add the chicken nuggets, add soy sauce, rock sugar and salt to taste.

8. Add taro cubes and stir fry for a good taste

9. Put the fried chicken nuggets with taro in an earthen pot and simmer with rice.

10. Turn the high heat to a low heat for ten minutes.

11. Turn off the heat and simmer for another 10 minutes before serving.

Tips:

Soak for 10 minutes to make the rice mature.
