Thai Pineapple Rice

I went to Koh Samui for a vacation some time ago. I accidentally saw the hotel offering a "Thai Cooking Class" and I happily signed up.
The entire cooking class is communicated in English. Fortunately, the teacher's English is not very slippery. My teacher and I just added simple sentences to bodylanguage and finished learning. I feel that I have exhausted my life-long familiar vocabulary. After the cooking class was over, I also sent me a graduation certificate, which was very pleasantly surprised.
After returning home, I studied behind closed doors. No, I'm here to hand over the "graduation results"-Thai-style pineapple rice.
I prepared the following ingredients for two people.

Thai Pineapple Rice

1. Pineapple hollowed out.
Use a small spoon and a fruit knife to remove the pulp.

2. Pineapple meat, cut into 1 cm cubes.
Wash the cherry tomatoes and cut into 4 equal parts.

3. Cut the shallots into sections, dice the onions, and cut the garlic into cubes.
Beat two eggs and stir well. (What I prepared here was for two people, so I beat two eggs.)

4. Blanch the green peas in boiling water and drain them for later use.
Boil the shrimps in boiling water, and remove the shrimp heads, tails, and shrimp thread.
(Boil the shrimp with boiling water because I think it is good to tear the shrimp thread. Of course, you can also remove the shrimp head and tail and shrimp thread according to your own habits.)

5. Add oil to the pot and cook until it is ripe. Pour in the egg liquid and stir fry.

6. Add onion and garlic diced and saute until fragrant. Then add the shrimp and green beans and continue to stir fry.

7. Add the rice and stir-fry until the rice is distinct. Turn the heat down, add light soy sauce, sugar, salt, and pepper to taste.
Turn on high heat again, add cherry tomatoes and pineapple meat, and stir fry for a fragrant flavor.
(The rice here is preferably leftover rice, or cooked rice that has been completely cooled.)

8. Finally, add raisins, shallots and cashews and stir well.
(Shallots, you can have some leftovers, sprinkle them on the noodles for decoration after serving.)

9. After frying, put the pineapple rice into a pineapple bowl.
The whole can be heated in the microwave for about two minutes to make the fragrance more intense.

10. Finally, sprinkle some green onions on the noodles and decorate them with mint leaves.
A delicious and high-value "Thai-style pineapple rice" is complete.

Tips:

Need to pay attention to:
1. The above ingredients are prepared for two persons.
2. The rice here is best leftover, or cooked rice that has been completely cooled.
