The Taste of Spring-shrimp and Pineapple Baked Rice
1.
Prepare all ingredients.
2.
Defrost the shrimp and squeeze out the moisture. Add salt and pepper to marinate for 10 minutes.
3.
Add the leftover rice to the egg mixture and stir well.
4.
Cut the pineapple vertically, dig out the flesh to make a bowl.
5.
Cut the excavated pulp into small cubes for later use.
6.
Cut the mozzarella cheese into small cubes.
7.
Pour a small amount of oil into the pot, add the shrimp, stir fry, and pour out.
8.
Raise the pot, pour oil, add the rice mixed with egg liquid, and stir-fry on low heat. The egg liquid will solidify and stick to the rice evenly.
9.
Add the fried shrimps and diced pineapple, stir-fry evenly, add salt and chicken essence to taste.
10.
Put the fried pineapple rice in a pineapple fruit bowl.
11.
Sprinkle the mozzarella cheese evenly on top.
12.
Put it in the oven, 200 degrees, and the cheese will melt.
Tips:
It’s best to use leftover rice overnight. The leftover rice has less moisture, and the grains will not stick together when they are fried.
