Three Kinds of Salad

1. The ingredients are shown in the picture;

2. Peel and wash the lotus root first, cut into strips, and soak in light salt water for ten minutes;

3. Rinse the lotus root several times and cook it in a casserole. If you like crispy, cook it for a while. If you like noodles, cook it for a while, but it must be cooked;

4. The ingredients can be prepared when the lotus root is boiled, and the peanuts are sautéed over a low heat;

5. Rub off the peanut coat, and crush it with a rolling pin;

6. Mix the chili and white sesame seeds and mix well;

7. Put an appropriate amount of oil on the wok until it smokes, let it cool for half a minute and then pour the oil on the chili, stir while adding, until it becomes spicy;

8. Remove the cooked lotus root and drain the water;

9. Peel the lettuce, wash, cut into strips, remove the leaves of celery, wash and cut into sections;

10. Peel the garlic, wash and chop into puree, cut the coriander into sections, and chop the chives;

11. Take a small bowl, add some cold soy sauce, balsamic vinegar, chili pepper, pepper oil and sesame oil, and some salt and sugar to make a hot and sour sauce;

12. Put lotus root, lettuce, celery, coriander, green onion and chopped peanuts in a pot or a larger container, add the sauce and mix well~

Tips:

1. It is best to use a casserole for boiling lotus roots. The lotus roots will not turn black. Soak them in light salt water for a while before boiling to prevent the lotus roots from turning black~
2. If the lotus root likes crispy, cook it for a while. If you like noodles, cook it for a while. I like a little bit of noodles. Cook it for about 40 minutes~
