Tianma Black Chicken Soup

Prepare half a black-bone chicken.

Prepare 3 shiitake mushrooms, two ginger pieces, one grass fruit, and two chives.

Cut the black-bone chicken into large pieces, blanch it in a boil, and wash off the foam.

Put the washed black-bone chicken into a casserole, add an appropriate amount of water to a boil over high heat, skim off the foam, and add the prepared shiitake mushrooms, ginger slices and grass fruits.

Peel and wash fresh gastrodia elata and cut into thick slices.
6.
The black-bone chicken is boiled for one hour and then put in Tianma and boiled for another half hour.
7.
Add an appropriate amount of salt and stir well.
8.
Add the chives.
Tips:
No fresh gastrodia elata can be used to make soup with dried gastrodia elata. Dried Gastrodia can be soaked in water for about 10 hours before eating and then sliced.
