Tiramisu (birthday Cake Version)
1.
First make the sponge cake and separate 6 egg yolks.
2.
Whip the egg whites to dry hair, add tartar powder and 1/3 of the sugar during the process.
3.
Pour the remaining 2/3 of the sugar into the egg yolks and mix them with a whisk.
4.
After the egg yolk is beaten to light yellow, add two tablespoons of water and mix well, then sieve the low-gluten flour, baking powder and salt and pour into the light yellow paste and mix well.
5.
Add the beaten egg whites to the egg yolk roux in batches.
6.
Mix well. (Avoid defoaming)
7.
Pour the batter into an 8-inch cake tin and bake in an oven preheated to 180 degrees. (Baking paper on the bottom of the mold to avoid sticking to the bottom)
8.
After baking for about 35 minutes, let cool.
9.
Demold
10.
Cut the cake into small pieces and cut off the sides of about 1 cm.
11.
Now make the cheese paste and whip the whipped cream first.
12.
Then mix the cream cheese, 4 egg yolks, powdered sugar, and honey together and beat.
13.
Mix the whipped cream into the whipped cream cheese.
14.
Add 50g of rum to 150g of coffee liquid.
15.
Add 1 tablespoon of the well-prepared coffee liquor to the cheese cream paste and mix well.
16.
The isinglass powder is dissolved in hot water.
17.
Cut the sponge cake in half and put half of the sponge cake in an 8-inch detachable cake tin.
18.
Pour half of the coffee liquor evenly on the cake.
19.
The melted isinglass powder is quickly mixed into the cheese cream paste.
20.
Pour half of the cheese cream batter into the cake tin.
21.
(I'm sorry to forget to put baking paper around it first, and fill it up now.)
22.
Prepare some finger biscuits for decoration. (Optional)
23.
Arrange the finger biscuits along the cake tin. (If there is no finger biscuits, this step can be saved)
24.
Put another piece of cake and drizzle with the rest of the coffee liquor.
25.
Pour in the remaining half of the cheese cream batter.
26.
Flatten the surface as much as possible with a shovel.
27.
Keep in the refrigerator for at least 5 hours. (I put it all night)
28.
Demoulding.
29.
Put the cut words.
30.
Sprinkle with cocoa powder.
31.
Carefully remove the words.
32.
carry out!
Tips:
Because it is a birthday cake, it needs to be cut into pieces when eating, so the coffee wine part is less than the traditional tiramisu, so as to avoid the cake body from being too wet and inconvenient to cut.
