Tofu

Most of the water tofu bought here is brine tofu, which is very tender. Rinse it with water to control the moisture.

Sprinkle some flour on the bottom of the plate, slice the tofu evenly and place it on the plate, then lightly pat the flour on the top.

Beat the eggs and mix well.

Wash the green peppers and red peppers and cut into small cubes. Wash the shiitake mushrooms and blanch them before washing and shredding. Peel the green onion and ginger, wash and chop them.

Add appropriate amount of oil to the wok, coat each slice of tofu with egg liquid, and fry in the pan.

Turn it over and fry until golden brown on both sides.

Set aside.

Put a little oil in the frying pan, saute the scallions and ginger, add green red peppers and mushrooms, stir fry, add light soy sauce, oyster sauce, salt to taste, add half a bowl of water, and pour a little wet starch.

Add the fried tofu, simmer and collect the juice.

Take out the pan and serve.
