Shepherd's purse contains more protein, calcium, and vitamin C. The calcium content exceeds tofu, and the carotene content is similar to that of carrots. Shepherd's purse is the most delicious of wild vegetables because it is rich in 11 kinds of amino acids.

Tofu Soup with Shepherd's Purse

1. Wash the shepherd's purse and set aside.

2. Cut into fines.

3. Shred the lean meat.

4. Fry the shepherd's purse slightly in oil and serve.

5. Fried shredded pork,

6. Add the broth.

7. Dice the tofu, one centimeter square.

8. After the soup is boiling, add the tofu, boil again, and add the fried shepherd's purse. Do not cover the pot to prevent the shepherd's purse from turning yellow. Bring the soup to a boil again, add starch to thicken, stir evenly, add salt and monosodium glutamate, and it can be out of the pot.

Tips:

After the shepherd's purse is placed, the pot can no longer be covered, and the green leafy vegetables with the lid will easily turn yellow.
