1. Cut the tofu into small pieces, put it in a pot under cold water, and continue to boil for about 2 minutes after boiling. Remove and filter out excess water. (Remember that it is a pot under cold water, which can cook off the extra beany smell)
2. Crush the boiled tofu with the back of a knife. Take two or three egg whites. After stirring, mix with the tofu and stir well. Add the appropriate amount of salt and chicken essence according to the taste. (The egg whites left over from baking can be used.)
3. In a wok (a non-stick pan is best), heat the wok with cold oil, and fry the tofu until it is cooked. Fried is dry and fragrant.
4. Stir-fry and serve.
5. Fry some red chili peppers in a wok, and add some red potherbs. Saute. Embellish it. When eating, let the tofu mix with snow red to eat together, the taste is very good. If it's for a child to eat it, just eat the tofu shreds. A spoonful of a spoonful, I didn't even feel that I was eating tofu.
