Tofu with Minced Meat

Mushroom tempeh, take two spoons and set aside.

Cut tofu into cubes, finely chop green onions and ginger.

Pour oil in the wok, fry the chopped green onions, add the minced meat and stir fry.

Pour the shiitake mushrooms and tempeh and stir fry to get the fragrance.

Pour the tofu cubes and top with light soy sauce and dark soy sauce. The dark soy sauce will have a better color effect, so it should not be too much.

Add a small amount of broth or water, mix well, bring to a boil on high heat, turn to low heat and simmer until the tofu is flavorful. Pour starch water to thicken. Just add chopped coriander out of the pot.
Tips:
1. You can use southern tofu or northern tofu for this dish. Pay attention to the operation method and don't let the tofu break up.
2. Whether the tofu should be blanched or not depends on the quality and freshness of the tofu. Sometimes the tofu you buy is the kind that is out of the pot, so the blanching is omitted. To blanch the tofu, boil a pot of hot water, add salt, put the tofu in a colander, and blanch it directly.
