Tofu with Mushrooms

Wash the mushrooms, blanch them with boiling water and let them cool for later use.

Cut the shiitake mushrooms in half.

Cut tofu into small pieces and dice carrots.

Mince the onion, ginger and garlic.

When the oil in the pot is hot, add the green onion, ginger, garlic and sauté until fragrant.

Add tofu, season with soy sauce, sugar, salt, oyster sauce, and pepper. Heat water and cook for a while. Tofu is fragile, so lightly push, don't stir fry.

Add water and starch to thicken.

Add chopped green onion and carrots to garnish.

Finished product.
Tips:
Tofu is fragile, don't stir fry, just push it gently with a spatula.
