Tofu with Pepper Flavor and Red Oil

Main and auxiliary ingredients: tofu, Pixian bean paste, cooked pepper powder, green onion ginger,

Cooked pepper powder: Put the peppercorns in a pot, and slowly bake them on a low fire. After drying, use a rolling pin to crush them and serve.

Boil water in a pot, cut the tofu into cubes, and blanch in the pot for 1 minute.

Remove it, drain it, and set aside.

Heat oil in a pan, add Pixian bean paste and fry on low heat.

After sautéing the red oil, add green onion and ginger and saute until fragrant.

Add an appropriate amount of water to a boil and cook for about 2 minutes.

Add spare tofu and cook for 3 minutes.

Season with a little salt and monosodium glutamate, pour in water and starch to thicken the thick gorgon.

After the gorgon juice is gelatinized, turn off the heat.

Take out the pan and serve.

Sprinkle in an appropriate amount of cooked pepper powder and serve.
Tips:
1. Be sure to use cooked pepper powder. Grinding with a food processor can also be used.
2. Pixian Doubanjiang has a salty taste, so add salt to it.
