Tomato-based Shrimp
1.
Cut off the shrimp gun, shrimp whiskers, and shrimp feet and rinse them off
2.
Count down from the head of the shrimp, and use a toothpick to pick out the shrimp thread between the joints 2 and 3 (be careful in this step, otherwise the shrimp thread will be easily broken)
3.
Pick out the shrimp thread completely, drain the shrimp and set aside
4.
Cut chives into sections, shred ginger, and slice garlic cloves; put the sauce in a small bowl and mix well
5.
Pour a little more oil into the pan, heat up, add the shrimps, fry them over high heat until the shrimps change color, then take them out of the pan and set aside
6.
Leave the bottom oil in the pot, saute the onion, ginger, garlic
7.
Pour the seasoning sauce, change the heat to low, and stir fry evenly
8.
Pour the shrimps and stir-fry until the shrimps are all covered with sauce and taste. Don't stir-fry the shrimps for too long, otherwise the meat will become old and taste bad.
