#春食野菜香# Toon Egg Soup

Fresh toon buds from the wild

Split a whole toon bud

Use boiling water to blanch the toon buds with cold water and set aside

Beat the eggs into a bowl and add some salt

Stir the eggs with chopsticks, pour in the cooking wine and some warm water.

Use kitchen paper to stick out the foam when whisking the eggs or filter it.

The scalded toon sprouts are sandwiched in the egg mixture, leaving a little bit to be sprinkled on the custard when they are finally steamed out.

Put water in the pot to boil, put the bowl into the pot and steam

The mouth of the bowl is sealed with plastic wrap to prevent water vapor from flowing into the bowl and affecting the taste.

Boil the water and steam for about ten minutes to get out of the pot

Sprinkle the remaining toon buds

Top with light soy sauce and sesame oil

Tips:
When making toon sprouts, be sure to blanch it in water or scald it with boiling water. After a minute or so, use cold water. Edible toon containing nitrite is harmful to the human body, so you can eat it with confidence.
