Traditional Wife Cake

First make the glutinous rice filling: pour water, sugar, and vegetable oil into the pot. Bring to a boil on high heat, then turn to low heat. Immediately pour in all the glutinous rice flour, stir evenly quickly, so that the glutinous rice flour and water are completely mixed to form a sticky filling, turn off the heat. Add cooked black sesame seeds and winter melon sugar cubes and mix well.

Spread the fried fillings flat on a plate, put them in the refrigerator for 1 hour, and refrigerate until the fillings are not sticky.

Divide the refrigerated stuffing into 16 equal portions for later use.

Then make the water and oily skin: mix flour, sugar, whole egg liquid, lard, and water, and knead it into a smooth and soft dough (depending on the water absorption of the flour, the amount of water needs to be adjusted as appropriate, and it must be kneaded into a soft dough. Can't be too dry).

Divide the dough into 16 parts, knead them into balls, and let them rest for half an hour (to prevent the surface of the dough from drying out, cover it with plastic wrap or a damp cloth).

Then make shortbread. Mix the flour and lard and knead until it forms a dough. Divide the kneaded pastry into 16 equal parts.

Take a piece of water-oil-skin dough that has been set aside, and flatten it into a round shape.

Place the pastry dough in the center of the water and oil crust dough.

Wrap it up and place it with the opening facing down.

Roll out the wrapped dough into an oval shape with a rolling pin.

After rolling it out, roll it up from top to bottom.

Rotate the rolled dough 90 degrees and roll it out again into an oval shape (this time the oval shape will be longer than the first time).

Roll up again from top to bottom. Roll all the 16 pieces of dough and let it rest for 15 minutes (remember to cover with a damp cloth or plastic wrap).

Take a piece of dough that has been set aside and roll it out into a round shape (make it thick in the middle and thin in the surroundings as much as possible).

Place a piece of glutinous rice filling in the center of the dough and wrap it.

After wrapping, close the mouth down, roll it into a round cake, and place it on a baking tray.

Brush the surface of the dough with whole egg mixture and sprinkle some black sesame seeds. Then use a knife to make three cuts on the surface of the dough (need to cut through the dough). After standing for another 15 minutes, put it in a preheated oven at 200 degrees and bake for 15-25 minutes until the surface is golden.
Tips:
1. The filling of this wife's pie is traditional glutinous rice filling. Nowadays, there are many kinds of fillings for the wife's pie. Bean paste and jujube puree can be used as the filling of the wife's pie. You can choose according to your own preferences. Winter melon velvet is added to the fillings of traditional wife pie. Later, for the convenience of production, it is generally replaced by sugared winter melon.
2. Chinese pastries are made with lard, which has a good shortening effect, but it has a smell of lard. If there is no lard, it can be replaced by an equivalent amount of butter. However, the effect of shortening is lard.
3. Be patient when wrapping the stuffing to avoid exposing and bursting the stuffing when baking.
4. Before baking, make sure to make a cut in the dough! Need to cut through! Because the glutinous rice filling will swell when it is roasted, if it is not scratched, the filling will burst!
