Clean the pork belly and cut into mahjong-sized cubes.

Boil cold water into the pot.

The blanched pork belly must be kept dry to avoid splashing oil when it enters the pot.

Heat the wok, add vegetable oil, add the pork belly and stir-fry until the fat in the fat is precipitated and the surface is slightly charred.

Add 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce, stir fry for color, then add green onion, ginger, garlic, pepper and star anise.

Add some hot water, two-thirds of the can of Coca-Cola, add an appropriate amount of cooking wine, bring to a boil, turn to low heat and cook for about 1 hour.

Tips:
1. Don't cut the pork belly into small pieces, it will shrink during the stewing process.
2. The ratio of the hot water to the coke I added is about 2:3. How much coke is added depends on your taste, the more you add will be sweeter.
3. Don't cook too short on low heat. If the time is too short, the fat will be greasy.
