First add 350 grams of flour to form a thick paste

Wait for the fermentation to double the size, and open the honeycomb-shaped holes inside to make the dough.

Add the remaining flour and form a dough

When the dough has risen to twice its size, there are many pores in it, and the dough has risen.

Knead the fermented dough until it has a smooth surface, divide it into parts, and then cover it with a cloth and continue to hair for about 20 minutes to let the hair rise a little bigger. In winter, it needs to be placed in a warm place to let its hair grow.

Put the water in the basket and steam for 30 minutes on high heat. My steamed buns are big. If you make a small one, the time can be controlled within 20-25 minutes depending on the size.

The inside of the cut is also red, but it is not the bright red color, the dark red of natural red yeast rice, which is very healthy steamed buns. In the morning, I rolled the shiitake mushroom sauce with egg crust and paired it with steamed buns.
Tips:
It takes a long time to ferment the dough with rice wine. If it is winter, it can be fermented in a warm room. Our place is now relatively cold, the kitchen temperature is below 10 degrees, if it is placed in the kitchen to let it ferment naturally, the first fermentation will basically take more than ten hours. If it is a warm room, a few hours is almost the same. If you are used to baking powder, please note that this dough requires some patience, and the deliciousness takes time to brew.
