Prepare materials. (Different brands of flour have different water absorption properties. You can reserve some of the liquid in the formula to add as appropriate when making the noodles)

Use a bread machine to knead the dough. All the ingredients are put into the bread bucket in the order of liquid first and then powder (egg→water→sugar→salt→bread flour→yeast). Note that the sugar and salt are placed in the two corners of the bread bucket separately, and the yeast is put last (the yeast cannot be directly in contact with the salt, if the bread machine has a yeast box, you can put it directly into the yeast box).

Start the bread maker kneading program, usually 10 minutes, after a program, the dough is smooth, add olive vegetables and olive oil. Start another dough-making program.

After the two kneading procedures are completed, the dough is smooth and elastic, and there will be some small bubbles on the surface. The requirement for the dough for the small meal bag is not as high as for the toast, and it does not have to reach the full expansion stage, so it does not matter if the glove film is not released. If you feel uneasy, you can start the kneading procedure again, the whole process of kneading for 30 minutes, do not kneading for too long, too long will affect the taste.

The dough is still in the bucket of the bread machine, and the fermentation button of the bread machine is selected for one firing. The whole process is 1 hour (it can be shortened to about 50 minutes in summer). When the dough is twice as large, dip your fingers in flour and insert a hole so that the dough does not shrink or collapse.

After the fermentation is complete, start the kneading program to exhaust air, and take it out after 5 minutes. Or take out the dough and manually knead the dough to exhaust air. After exhausting the air, divide it into several doughs evenly, knead them round, and cover with plastic wrap to proof for 15 minutes.

I used a small 12-mold, and put a 20-gram ball in each compartment. The rest made a few oval shapes. (I didn't apply oil on the side of the mold, and the side is not easy to release after baking. I suggest you to sprinkle some powder or oil on the bottom and sides of the mold, or put a paper tray)

After the shaping is complete, the oven selects the fermentation function and puts it in the middle of the oven for secondary fermentation until it is doubled (you can put a bowl of warm water in the lower layer of the oven and ferment for 40 minutes). If the oven has no fermentation function, you can put it directly into the oven without turning on the oven, and put warm water underneath for fermentation; when it is hot, it can be fermented at room temperature, usually 1-2 hours, depending on the room temperature.

After fermentation is complete, brush the surface with egg liquid (if there is no egg liquid reserved, you can brush with honey and water, the ratio of honey to water is 1:1), put it in the middle and lower layer of the oven at 175 degrees, and bake for about 20 minutes.

For the oval shape, you can cut two knives on the surface with a small knife, and then wipe the egg liquid on the surface~

Bake until the surface is evenly colored, take it out, let it cool, and pack it (the bread can't be put in the refrigerator, it will dry and harden, and it must be put in a bag or sealed in a box).

Tips:
1. Sugar and salt are opened in the two corners of the bread bucket;
2. Salt and yeast cannot be in direct contact, they must be separated and the yeast must be put at the end;
3. If the taste of the bread is not soft enough, like steamed bread, you can find the reason from the following aspects: whether the yeast is invalid (the yeast should be sealed and refrigerated after opening), use high-gluten bread flour instead of ordinary high-gluten flour, Whether the kneading and two fermentations are in place;
4. I usually use the bread machine to make the noodles and the first fermentation. If there is no bread machine, it can be done manually. The same effect can be achieved, but it will be a little harder;
