After washing the beef tenderloin, wipe it dry with kitchen paper towels, and cut into cubes (do not cut too small, it will shrink when it is fried).

Add ginger, 2 teaspoons of salt, 4 tablespoons of cooking wine, 1 tablespoon of white wine, stir and marinate for half an hour.

Clean the dried red pepper and cut it into small sections with scissors.

Put a lot of vegetable oil in the wok and heat up, then add the diced beef and stir fry over medium heat.

Stir-fry for a while, the moisture in the beef will evaporate, the beef feels less, and the oil becomes very cloudy.

Continue to stir-fry until the beef becomes dry and darker, and the oil becomes clear. This process takes about half an hour.

At this time, turn to low heat and add 2 teaspoons of five-spice powder and 3 teaspoons of Chinese pepper powder and stir-fry for a few times.

Then add the dried red chili that has just been cut into small pieces and 3 tablespoons of minced chili.

Stir-fry for 2 minutes until the spicy flavor of the chili is released.

Add cooked peanuts (I use alcoholic peanuts) and stir-fry evenly.

Add 150 g of sweet noodle sauce and 150 g of bean paste and stir-fry for a few minutes (about 5-6 minutes) until the sauce is cooked through.

Sprinkle with ripe white sesame seeds and put them in a bottle or box with a lid, and store them in the refrigerator.

Tips:
1. Be sure to put more oil, and put the beef into the pot at least to cover the beef.
2. Stir-fry the beef until the color becomes very dark, most of the water evaporates, it will taste crispy, and it will not deteriorate easily when stored well.
3. The amount of chili depends on the spiciness of the individual. I seem to have a lot of it, but I don't use very spicy chili.
4. If you like sweet noodle sauce, you can use all sweet noodle sauce. I personally like half of sweet noodle sauce and bean paste.
5. The whole process must be stir-fried continuously, especially after adding sauce later, be sure to stir-fry continuously on low heat to avoid mashing the pot.
6. The amount I made this time is relatively large, because half of it will be given away, so it is recommended to make half the amount, so as to avoid over-eating within a week and being too wasteful.
