Two Pots of Pig's Trotters

Heat olive oil in a saucepan and fry the pork knuckle skin down until it is caramelized.

Then add water, boil and skim the oil, add fish maw, onion, green onion, parsley stalk, dried red pepper, simmer for 30 minutes, season with salt, and simmer for 1 hour

Stew until soft and tender, remove and cool, add abalone, beans, and a little white wine on the lid and continue to simmer. In another pan, fry the chopped onion, add the trotters, oyster sauce, dark soy sauce, light soy sauce, rice wine, and a little water, simmer for 10 minutes, and then collect the juice.
