Vegetable Clam Congee

Prepare ingredients: 30g rice porridge, a little clams, 10g enoki mushrooms, 15g chicken pickles, 15g carrots.
PS: To make this zinc-supplemented porridge for your baby, you don't need to pay special attention to the amount of ingredients, the ratio has little effect. The amount of ingredients in my recipe is probably enough for me and my baby.
Clams can be replaced with shellfish such as sea oysters and scallops. Fencaria can also be replaced with other green leafy vegetables.

Soak the clams in water for about 30 minutes.
PS: Before cooking the clams, it is best to put the clams in clean water and let them spit sand for a while. Sometimes when I eat clams, I will eat a mouthful of sand because the clams have not spit out the sand in advance.

Put cold water in the clams into the pot.
PS: Generally, shellfish seafood must be cooked in a cold water pot. When it is cooked to the mouth, it is basically cooked.

Look, the clams have been cooked one by one, which means they have been cooked.
PS: Fresh clams will open after they are cooked. If there are any unopened clams, it means that they are not fresh. Don't give them to your baby.

Rinse the cooked clams with boiled water to remove the shells and remove the black lines and belly sacs on the clams.
PS: Normally, adults can eat the whole clam meat directly, but it is best to remove the belly sac for the baby, and it will make the rice porridge look a little black.

Then chop the clam meat.
PS: Clam meat is very chewy, it is not easy for babies to chew, so be sure to chop the clam meat into smaller pieces!

Wash the enoki mushrooms and chicken hair cabbage and set aside.

Put an appropriate amount of water in the pot and bring to a boil. Put the enoki mushrooms in the pot and cook for a while until they are fully cooked.
PS: Because immature enoki mushrooms contain colchicine, which may cause poisoning, colchicine will decompose when preheated, so I blanch the enoki mushrooms first, and then put them in the cooked porridge.

Soak the blanched enoki mushrooms with cold water.

Cut enoki mushrooms into small cubes for later use.
PS: Flammulina velutipes is not easy to chew, so this step must be finely chopped.

Similarly, the chicken feathers are cooked in the pot.
PS: To deal with such green leafy vegetables, the step of blanching must not be less. It can remove residual pesticides and nitrite on the surface of vegetables.

The blanched chicken feathers should also be rinsed with cold water.
PS: After blanching, it is best to put it in cold water for a while. The purpose of overcooling is to stop heating and retain the green color of vegetables.

Cut the chicken salsa into small cubes and set aside.

Rub the carrots into filaments and set aside.

When preparing the side dishes, you can cook the porridge and rice in advance. Put the porridge and rice into the pot, and then add the right amount of water to start cooking the porridge.
PS: I used 30 grams of porridge rice and added about 430ml of water. Because I will add a lot of side dishes later, I am afraid that the porridge will be too thick, so I add more water. But this amount is not the amount of the baby's meal. Usually I will cook a little more together, and then serve the baby's portion. The remaining porridge will be added with some seasonings and saved for myself.
I usually use a rice cooker to cook porridge. I add 8-10 times the amount of water to the rice, but I use a small soup pot to cook the porridge. Without the lid of the pot, the water evaporates quickly, so I need to add more water.

When the porridge is boiling for 20 minutes, put the clam meat in the pot and continue cooking.
PS: In the process of cooking the porridge, stir constantly to prevent the pot from sticking.

Put the carrots into the pot and cook for 5 minutes until all the ingredients are cooked.

Finally, add the blanched enoki mushrooms and chicken greens and stir evenly. Since the enoki mushrooms and chicken hair vegetables are already blanched, just cook them for a while.

The vegetable clam porridge I boiled this time was very thin after cooking. Compared with thick porridge, it is a different taste, with soft and waxy porridge rice, it tastes warm and can be used as a baby's meal alone.

When choosing the food for these shells, you must choose fresh ones, and add them after ensuring that the baby is not allergic to them and that the stomach can adapt to them.
