The borscht without meat is also delicious. In fact, all the soups based on tomatoes are delicious.
Highlight here: vegetable butter is harmful to your health, please replace it with healthy fats.

Ingredients

Vegetarian Borscht

1. Potatoes, onions, carrots, tomatoes, beef cabbage (or cabbage), and celery (forgot to photograph them) are all diced. Add water to microwave the diced carrots to soften for 4-5 minutes, which can reduce the waiting time.

2. Melt a piece of vegetable butter in a pot on fire

3. First super soft onion and carrot

4. When the onion becomes transparent, pour in other vegetables

5. Add water to cover the vegetables, add a tuft of tomato sauce and two pieces of bay leaves
