Vegetarian Dumplings with Chives and Eggs

Add water to the flour, stir while pouring, stir with chopsticks to form a fluffy dough, then knead it into a smooth dough, cover it with plastic wrap and put it aside to wake up the noodles.

Knock 3 eggs in a bowl, add 1 tablespoon of cooking wine and enough salt, beat them, stir-fry them into a frying pan, and let them cool before using. Add salt to the eggs all at once to prevent the leeks from coming out of the soup.

The leeks are cleaned and chopped.

Squeeze the dried fungus dry, chop it, put it in the egg, put the chopped leeks together, add an appropriate amount of sesame oil and mix the leeks first, so as to prevent the leeks from coming out of soup.

Take a dumpling wrapper and put in an appropriate amount of dumpling filling. Vegetarian fillings are relatively loose and can be filled with a spoon. If you are a novice, it is recommended to put a little less filling. Too much filling is difficult to wrap, and it is easy to open and leak when cooking.

After all other dumplings are wrapped, place them on the cover to prevent adhesion. If you don't cook it for a while, be sure to dip it in some flour before putting it on, otherwise it will be so sticky that you will collapse when the dumplings are cooked (I did this before).

Put enough water in the pot, boil, add the dumplings and cook them, take them out and serve them on the table. Vegetarian dumplings are easy to cook, so they don’t need to be as long as meat dumplings. But the water must be wide. The plain dumplings will float when they enter the pot, so you can quickly catch them when you roll them twice, otherwise the leek stuffing will not be fresh and it will cook into a pot of porridge.
