Vegetarian Fried Eggplant

First cut the eggplant into hob pieces, sprinkle a little salt (which can be the amount of salt required for this dish) and pickle for a while to marinate the moisture.

Make a bowl of juice, add soy sauce, vinegar, oyster sauce, and sugar to the bowl, mix well and set aside. If you use less salt when pickling eggplants, add salt too. I have used the amount of salt needed for this dish, so I don’t need to put it anymore.

Heat the oil, add the onion, ginger, garlic, dried red pepper, and pepper to fragrant

Pour the juice into the bowl.

Add the marinated and stewed eggplant and stir fry.

After stir-frying evenly, pour some water on the side of the pot and fry on medium heat until the eggplant is cooked through.
