Vegetarian Fried Mung Bean Sprouts

Prepare mung bean sprouts and spring leek.
2.
Wash and drain the bean sprouts.
3.
Wash the spring leek and cut into small pieces for later use.
4.
Heat oil in a pot, stir and stir-fry the spring leek.
5.
Pour in mung bean sprouts and stir-fry quickly; add salt and vinegar, and stir-fry well.
6.
Adjust the flavor and serve on the plate.
Tips:
1. Mung bean sprouts are rich in crude fiber and should not be eaten by those with deficiency of spleen and stomach and indigestion.
2. Adding a little vinegar when cooking can make the protein solidify as soon as possible and prevent the loss of vitamin B.
3. Fried mung bean sprouts should be fried quickly to keep moisture and vitamin C from being damaged.
