Vegetarian Fried Mushroom

Main ingredients: Pleurotus ostreatus, cucumber. Pick oyster mushrooms into small flowers and put them in a basin, soak them in water and some salt for 15 minutes

Cut the green onion, ginger, garlic, and prepare the dried chili

Wash the cucumber, cut into small pieces diagonally, and then cut into diamond-shaped slices

Wash the oyster mushrooms, then put the pot on the fire and boil water. After the water is boiled, add the oyster mushrooms and blanch them for about two minutes. You can see a lot of white foam coming out, remove them, and rinse off with water

Tear the washed and blanched oyster mushrooms for later use

Heat oil in a pan, saute chives, ginger, garlic and dried chilies

Add oyster mushrooms and stir-fry for 2 minutes on high heat

Add soy sauce, sugar and salt, stir well

Pour in the cucumber slices and continue to stir-fry for about half a minute, not too long, otherwise the cucumber will be too soft and affect the taste
