Vegetarian Stir-fried Asparagus
1.
Peel and wash lettuce and white asparagus.
2.
Cut the lettuce with a blade, blanch it for later use.
3.
Cut the white asparagus into diamond-shaped pieces and blanch it for later use (heat the water to a boil, add a small amount of salt and oil, and then pour the asparagus. The general blanching time is about 3 minutes.).
4.
For the blanched lettuce slices, the top slice is turned inward, as shown in the picture.
5.
Swing in a circle one by one, as shown in the figure.
6.
Heat oil in a pan, add minced garlic and sauté fragrant, add the blanched asparagus and stir-fry for a while, add an appropriate amount of salt and stir-fry evenly to get out of the pan (white asparagus itself tastes delicious and does not require much seasoning during cooking to avoid covering Its own taste).
7.
Pour the asparagus out of the pan into the middle of the plate surrounded by lettuce. Whether the color is green and white.
Tips:
The asparagus should be blanched. There are two reasons why asparagus needs to be blanched. One is that this cooking method can retain the vitamins in the asparagus to the maximum and avoid the loss of nutrients. The blanched asparagus has a bright color and crisp texture. Second, because asparagus contains oxalic acid, it is easy to combine with calcium after entering the human blood to produce calcium oxalate, and blanching can remove most of the oxalic acid, which makes it easier to eat.
