Vinegar Shredded Potatoes

Wash potatoes, peel them, cut into shreds and rinse with clean water for later use.

Cut the chives into small pieces, separate the green onion leaves, and cut the coriander into small pieces for later use.

Add clean water to the pot and bring to a boil, add the shredded potatoes to a boil for one minute, remove the cold water.

The blanched potato shreds are drained in cold water and ready.

Heat the pan with cold oil, add the green onions and stir fragrant.

Add potato shreds and stir-fry evenly over high heat, add appropriate amount of salt and white vinegar, and stir-fry well.
