Vinegar Sweet Potato Shreds

Prepare the ingredients.

Peel the sweet potatoes and slice them vertically.

Cut the sliced slices into filaments.

Soak the sweet potato shreds with water to remove the starch on the surface of the sweet potato shreds.

Finely chop green onions.

Pour two teaspoons of vegetable oil into the wok. When the oil is hot, sauté the green onion until fragrant.

Pour the sweet potato shreds and stir fry twice.

Add two tablespoons of balsamic vinegar and stir fry the sweet potato shreds after the color has changed slightly;

Pour in about two spoons of sugar and stir fry.

Add a little salt and light soy sauce to neutralize the sweetness.

Continue to stir-fry until the sweet potato shreds are cut off and turn off the heat. (Always use high heat to stir-fry during the frying process, otherwise the shredded sweet potato will become mashed sweet potato. This is better cooked than shredded potato. Do not add water when frying).
