Warm Lamb Soup

Separate the bone and meat of the bought leg of lamb

Boil the lamb and bones in the pot

Rinse the blanched lamb with running water

Pour 1500Ml of water into the casserole, which is about 5 bowls of water. Put the lamb bones first, then put the sliced ginger and pepper in turn

Cover the lid, cook on the pot, after the high heat boils, turn to low heat and cook for 60 minutes

After 60 minutes, add the mutton. The meat does not need to be cut. Enlarge the meat directly. First, turn to high heat, then turn to water and heat for 50 minutes. After 50 minutes, take out the big meat and cut into small pieces. Cut the garlic sprouts into minced pieces separately

Put the cut lamb into the soup pot, blanch it, prepare a small bowl, put 4g salt, 5g white pepper, pour the cooked soup into the bowl, add coriander and minced green garlic.
Tips:
1. Try to choose lamb shank for the mutton soup, but lamb belly soup is also ok, but I prefer to use lamb shank, it will be oily.
2. When boiling the soup, put the bones in first, and put the meat later, otherwise the meat will burn directly and it will not taste good.
3. Mutton has a stinky smell, so the process of blanching is indispensable. If it is an old goat, you can put more pepper and ginger.
4. If you like, you can also put radish and yam, radish, yam and mutton to match it is better, and it is good for the body.
5. In winter, you can eat more mutton soup, especially for female friends. Those with weak and cold physique are more suitable for eating. If you have hot physique, you have to eat less, which is easy to get angry.
6. During the whole process, the high heat has to be turned to low heat after boiling. The water should be put a little bit more at the beginning. The soup will be boiled for a few hours. Adding water in the middle is not good for the soup.
7. The salt and white pepper are put into the bowl when the soup is good, don't put it in the pot for cooking, it will boil the taste of the white pepper directly, and add the salt and white pepper according to personal preference.
