West Lake Beef Broth

Ingredients: beef tenderloin, white mushrooms, soft tofu, eggs, coriander, chives

Cut the beef tenderloin into cubes, then chop, dice the tofu, dice the white jade mushroom, beat the egg white into a small bowl, mince the shallots and parsley.

Soak minced beef in water to prepare wet starch

Boiled minced beef

Skim the foam (move fast)

Boil the beef until just cooked out

Put in water (or chicken broth) in a pot and bring to a boil, add white jade mushrooms

Put soft tofu

Put the beef on the boil.

Add salt

Put pepper

Pour in wet starch

Beat in the egg whites, add sesame oil, and sprinkle with coriander and shallots when serving
Tips:
1 You can mix beef cubes with salt, starch, and water to marinate for 1 hour, set aside.
2 Appropriate amount of cooking wine can be added.
3 You can add beef after mixing in wet starch.
