Western-style Clam Stewed Loofah

Peel the loofah and cut into strips, peel the potatoes and cut into dices, cut the ginger garlic and parsley into mince, and cut the onion and tomato into dices.

Heat a pan, pour a small amount of oil, add chopped garlic and chopped onion, sweet pepper powder, and sauté until fragrant. Add diced tomatoes and fry until a paste.

Add clams and potatoes, stir fry, add white wine, stir fry for one minute.

Pour the sautéed ingredients into a saucepan, add a small amount of water, boil, turn to low heat and cook for ten minutes, add loofah, and continue to cook for 3 minutes.

Season with salt and pepper, sprinkle with parsley.
