White Rice Cake

After the rice is washed, add water and soak overnight. ★The weight ratio of rice to water is 1:1.5. Pour the beaten rice milk into a large bowl. Heat over water and stir continuously until the temperature of the rice milk rises and it begins to thicken and become half-boiled rice milk. ★Water-proof heating can heat rice syrup more evenly. If you pour the rice milk directly into a pot and heat it on a low heat, it is easy to form lumps due to uneven temperature. Be patient during the heating process and keep stirring until the rice milk becomes thick. ★It can also be heated in a microwave oven. Pay attention to heating little by little when heating, take it out from time to time to observe and stir, to avoid one-time overheating and cause the rice slurry to agglomerate.

Heat until the rice milk becomes thick obviously (the thickened state of the rice milk is obvious, and it is easy to feel), and it will slowly drip in thin lines when picked up with a spatula. At this time, half-cooked rice milk was obtained. Cool the rice milk to warm. ★We need to get half-cooked rice milk to proceed with the subsequent fermentation process. First, the rice milk with a certain consistency can be more fully fermented and grow taller; second, the starch in the rice milk after half-cooking has been gelatinized, so that it will not sink to the bottom during the fermentation process. ★Do not overheat the rice milk. If the temperature is too high, the rice milk will become too thick, even hard and agglomerated.

Fully dissolve dry yeast in 20 grams of warm water to become yeast water. Then pour the yeast water into the warm rice milk and mix well.

Ferment the rice milk in a warm place (you can directly ferment at room temperature in summer, use the fermentation function of the oven when it is cold, or put it in a steamer with hot water). Ferment for about 2 hours until the rice milk grows twice as high (at this time, a lot of small bubbles are formed inside the rice milk). ★The fermentation time will vary according to the temperature and the activity of the yeast (in addition, if your formula is reduced in sugar, it will also ferment faster). Please judge according to the actual situation. Avoid over-fermentation, otherwise it will produce sour taste.

Cover the bottom of the steamer with greaseproof paper, and then pour the fermented rice syrup (do not stir the fermented rice syrup, just pour it in). The thickness of the rice milk is about 2cm (not too thick, otherwise the effect is not good). Then put it in a steamer and steam it on high heat for about 15 minutes after SAIC (depending on the size of the steamer). The steamed white rice cakes are eaten after cooling down (it tastes better after being put in the refrigerator). ★If you don't have a steamer, you can also pour the rice milk into other molds, such as cake molds, large crispers, pizza trays, etc., as long as it is large enough and the bottom is flat (pay attention to grease and prevent sticking). This white rice cake has to be steamed into thin slices for the effect, and the rice milk should not be too thick. ★Pour the rice milk into the mold and steam it directly in the pot without standing for proof.
