Winter Melon and Crucian Carp Soup

1. Peel the winter melon and dig out the flesh.

2. Wash the winter melon and cut into 3mm slices.

3. The crucian carp is scraped off the scales, gutted, and cleaned.

4. Spread 1 gram of salt on the surface of the crucian carp and marinate for 10 minutes.

5. Heat up the oil in a pan and add ginger slices.

6. Saute the ginger slices and add the crucian carp.

7. Turn on medium and low heat, and fry until the crucian carp is golden on both sides.

8. Pour the cooking wine.

9. Pour boiling water in.

10. Boil on high heat until the soup is milky white.

11. Put the winter melon slices into the soup.

12. Put the salt into the soup.

13. After stirring well, boil on high heat for 2 minutes.

14. Time is up, put the soup in a bowl.

15. Sprinkle with chopped green onion and serve.

Tips:

Winter melon is sliced into thin slices and it is easy to cook. If you like to eat it crisper, you can cook it for a while.
